The Szechuan street food classic mixes bouncy wheat noodles with a rich "wanza" topping, a magical combination of mellow golden peas and plant-based ground, while creamy peanut sauce and numbing chili oil provide the aroma and spicy flavor. Top it with mustard greens and scallion for freshness (also pairs great with a fried egg). A classic for a reason!
Our wavy, ribbon noodles are sun-dried for 12 hours instead of being fried, giving them a perfect al dente chew. The unique squiggly shape knife-cut noodles capture just the right amount of all the toppings and sauces.
- Bring 6 cups of water to a rolling boil. Add the topping packets (plant-based meat flavored sauce & peas), unopened, to the boiling water, and heat for 1 minute. Then set them aside.
- In boiling water, add and cook the noodles for 4½-6 minutes. Stir occasionally.
- Drain the noodles. Add sauce and toppings. Mix well and enjoy!
